1 cup butter, room temperature 1/2 cup sugar 3 tbsps cacao powder 1 tsp vanilla extract 2 cups oatmeal flakes 2 tbsps cold coffee or liquer (optional) 1/2 - 1 cup coconut, grated
1. Render the butter in smaller bits and mix together by hand with the sugar, cacao, vanilla extract. 2. Add in the coffee (optional) and bind together still by hand with the oatmeal. It will be a sticky mess but it's supposed to be sticky. 3. Roll into small balls. Use the icecream scoop if you have one to get the same sized balls. Thereafter roll them in a bed of coconut. 4. Set to harden in the fridge for about 2 hours.
Note: this is the traditional recipe for the swedish version of the no-bake oatmeal balls which are also called Nigger-balls, which was then later censored (you can imagine why.. ) even though the name was more derived from the color of the bites (blackish.. negro). This is not glutenfree or sugarfree.
That looks delicious! I'll have to try that sometime soon. My sisters make a similar no-bake cookie, but without coconut and coffee, and with peanut butter.
